Save money and time by making a second batch!
- Freeze the second batch by placing 8 stuffed, rolled tortillas on a cookie sheet.
- Flash freeze for 1 hour and then put the enchiladas into a zip lock bag and leave in freezer until you are ready to eat. Put one cup of enchilada sauce into a small zip lock bag and freeze with the frozen enchiladas.
- To cook: Thaw the bagged sauce in some water. Pour sauce to cover bottom of the pan. Place frozen enchiladas into a 9×13 pan. Pour sauce over enchiladas and top with cheese. Bake for 30-45 minutes at 350′, until hot and bubbly and the cheese is melted.
Tips
- This meal costs only $12.43 for 16 enchiladas! Or $6.22 for one meal!
- Add more veggies and reduce the amount of meat used in any recipe to save money.
- If you don’t like/use cream of chicken soup, you can make a roux with 2 TBS of butter, 2 TBS of flour, 1 tsp of Adobo seasoning, 1 cup of chicken broth, and 1 tsp of salt. **This is what I use.
- Want Gluten Free? Swap out the flour tortillas for corn!
- Makes a double batch. Freeze the second half to save time and money on those hectic nights you don’t feel like cooking!
