I do like the look of that recipe. I have never thought of mixing the sour cream into the main mix, I always just put it on top. That is a good idea, I love sour cream.
Thanks Charissa for bringing this recipe to Fridays Blog Booster Party

Thanks for stopping by Robin! These enchiladas are tasty, either way you make them. All the food for my wedding was handmade by some wonderful friends. I’m sure the food was good, but I only had two bites.

Great Melissa! You should make them, they are so good! I’ll be back to #HomeMattersParty. P.S. I try to make a double batch and freeze some to make it super easy the next time I want sour cream enchiladas.

Hi Charissa
I’ve just finished making the sour cream enchilada’s. As I was making them my daughter (10) walked in. ( not a good time to be adding spinach. “Yuk. What are you making”. ….. After having seconds she is taking some to school tomorrow. Thank you as she is a very fussy eater.
I had more mixture than I did tortillas. Do I freeze the mixture now, or do indeed to get some tortilla, cook them and then freeze. I am new to the gluten free, real food, cook from scratch lifestyle, so I don’t know a lot about freezing etc.
Thank you very much for you ideas and recipes may God bless you abundantly

Yay! Your comment Carol-Anne made me do a happy dance! I am so glad you and you daughter liked the enchiladas.
Regarding freezing the mixture, I have not done that before, but I don’t see why not. I freeze the rolled up enchiladas (both pre and post cooking) all the time and the mixture turns out just fine. I would freeze the leftover mixture in a plastic container, then thaw, then put it in the tortillas and cook like normal. If I end up with leftovers, I often will eat the mixture with rice or by itself for lunch.
Thanks for stopping by Carol-Ann!
